Homemade Pizza with Cheese and Chili Sausage, Cherry Tomato & Rocket Spinach on top + Grapefruit & Pomegrante Salad

What to do with leftovers? I always like to turn it into a pizza! 

Personally I don't mind pizzas, but never a big fan of the pizzas from the outside, because of their large amount of oil and cheese which leaves you with oily fingers, and the heavy sauce that drown the whole pizza! Therefore I like making pizzas from scratch, so i can control all the ingredients! And I like my pizza base to be thin, so I don't get filled up by just eating the carbs, and I like it NOT too crispy, so it still have a slight chewiness to it! 

Pizza Dough
Makes 2
2 cups of plain flour
8g dry yeast
1/2 tsp caster sugar
3/4 cup of warm water
2 tbsp olive oil

1. Sift flour into a large bowl, add yeast, sugar and a pinch of salt. Combine warm water and oil. Add to flour mixture. Mix until dough comes together.
2. Turn on a lightly floured surface, and knead for 8 minutes. Add more flour if necessary. Do the finger test to test its elasticity. 
3. Divide the dough in half. (You can freeze the dough from this stage for future use)
4. Roll out the dough to your desire thickness.



This time, I have left over sausages, cherry tomatoes and mozzarella cheese in the fridge, so I just bought an extra spanish onion (I love the colour and sweetness of spanish onion!!!) and some greens to go on top. 

Spread a good layer of tomato paste on top of the base, and sprinkle all your favourite toppings on top (except for the salad leaves!!!) and bake in the oven for 20 min (varies depends how crispy you want your base to be) at 200C. After it's done, decorate with some greens to add more colour, and I like to drizzle mine with some chili oil or Tobasco to spice it up a bit! 

Together with this dinner, I also made a simple salad with grapefruit and pomegrante and balsamic vinegar. The citric fruits just turned this salad to have such summery taste!!! And the balsamic vinegar just helps to bring out the flavour! I love the use of balsamic in my salads, a simple dressing yet full of flavour! And most importantly... low in fat! =)
