Double Chocolate Cheesecake...


Making dessert is probably one of the most enjoyable things for me to make!! Maybe because dessert can make people happy, not just by eating it, but also making it! 

Although cheesecake is not my favourite type of dessert, but I don't mind having a bite of it every now and then! 

Ingredients:
200g gingernut biscuits (I like to use gingernut biscuits because of the subtle spice, but you can always use digestive biscuits, arrowroot, nice, or chocolate biscuits)
80g butter
1/3 cup cold water
5 tsp gelatine
500g cream cheese, softened
1/2 cup icing sugar
1/2 cup milk
150g white chocolate, melted
150g dark chocolate, melted
1 1/2 cup thickened cream, whipped
1 punnet of strawberries

1. Grease and line a 24cm base springform pan. Process biscuits in a food processor. Transfer to a bowl. Add melted butter, stir until well combined, then press into the base and refrigerate until firm.
2. Place water into a bowl, sprinkle with gelatine, stand over simmering water until gelatine dissolves. 
3. Beat cream cheese, sugar and milk until smooth. Stir in gelatine. Divide cream cheese mixture into 2 bowls. Stir white chocolate into 1 bowl and dark chocolate into another. 
4. Fold half the whipped cream into white chocolate mixture and the other half in the dark chocolate mixture. 
5. Pour the dark chocolate mixture over biscuit base. Refrigerate for 10 min. Spread the white chocolate over the dark chocolate. Cover and refrigerate over night. 
6. Cut the strawberries in half and arrange on top of the cake. 

Maybe next time I can do a triple layered cheesecake with the extra layer as milk chocolate!
